Lactarius indigo, aka the indigo milk cap, is a beautiful (and edible) mushroom that oozes a bright blue latex when cut or torn. It is vaguely sweet, with a taste that reminds me a little of sweet corn and store-bought sugar cookies. Be careful if you think you have found this mushroom growing under birch trees. You might have found the poisonous Lactarius torminosus which has white gills and acrid milk. Ok, Lactarius milk would actually make a terrible, sticky shower. But they are delicious! Not all milk caps are good for eating, but you can taste the milk from any of them safely. Some is mild or “mushroomy,” some hot like wasabi (those are the ones you don’t want to eat!).
